Originally from the
Burgundy region, France. It adapts in temperate zones, clay soils and with a
high amount of calcium (calcareous). The Pinot Noir along with the Chardonnay
are the grapes that are used to produce the champagne. In France there are
three locations that specialize in its manufacture Cote Chalonnaise, Cote Nuits
and Cote Beaune. The red wines of the Alsace region have little tannins and are
excellent to accompany with white meats including fish.
