Risotto
Risotto is a traditional Italian dish made with short-grain rice.
→ Risotto is more of a technique than a dish.
½ onion, chopped
1 tbs olive oil
1 cup Arborio rice
3½ cups hot chicken stock (vegetables, water)
½ cup white wine
½ cup grated Parmesan cheese
2 tbs butter
Salt and pepper (optional)
1. In a saucepan with olive oil over medium heat, sauté the onions until translucent. Add the rise and cook until rice is coated with oil, about 2 minutes. Add the wine and stir constantly until wine is absorbed.
2. Add a ladle of hot stock and stir until liquid is absorbed. When the rice looks almost dry, add another ladle of stock and repeat until stock is absorbed, about 20-25 minutes. The risotto should be creamy.
3. Remove from heat, stir in butter, the parmesan cheese, and season with salt and pepper. Serve right away.
Tips for making risotto
• The ratio of rice to liquid is 1 to 3½
• Do not wash the rice before using
• Always use simmering broth or stock
• Wait until the rice absorbs all the stock to add some more

Single Grain Whiskey
The “Single Grain Whisky” is distilled in continuous column stills, resulting in a lighter and more delicate profile. To be labeled as Scotch, it must be produced exclusively in Scotland, matured for a minimum of three years minimum in oak casks and bottled at a minimum of 40% ABV.
→ Malt and Grain whiskey can be bottle as single grain or used in blended whiskies.
→ The term "Single" indicates it was produced at a single distillery, while "Grain" means that grains other than malted barley- such as corn or wheat-are used in the mash.

Sulfites / Sulfitos
→Sulfites / Sulfitos (English Version)
→ Sulfites are additives of sulfur dioxide (SO₂) used as a preservative and antioxidant in many foods, beverages and pharmaceuticals. You can find them in crackers, fruit juices, dried fruits, nuts, wines, beer, jams, canned tuna and other processed foods. In wine, they occur naturally during fermentation, and a small amount is added to preserve freshness and prevent oxidation.
Levels and measurement:
Sulfite level in wine is measured in "ppm" (parts per million).
• In the United States: FDA allows up to 350 ppm total sulfites in wine.
• Red wines: typically, 50-100 ppm (lower because tannins act as natural preservative)
• White and rosé wines: 100-150 ppm
• Sweet wines: can reach 200-350 ppm
Organic wines:
• Organic wine producers usually work between 40 ppm and 80 ppm.
• According to USDA Organic Standard: to be labeled as "organic wine", wine must have NO added sulfites and less than 10 ppm naturally occurring sulfites.
• If labeled "made with organic grapes" it can have up to 100 ppm added sulfites.
Are they bad for health?
For 99% of people, they are completely safe. Only about 1% of the population, mainly sensitive asthmatics, may react. Sulfites are NOT the cause of wine headaches — that's from alcohol and histamines. Dried fruits and French fries have much higher ppm than wine.
Tip Chef at Home 360: If you are sensitive, choose dry red wines, certified organic wines, or wines labeled "no sulfites added." Pour the wine and let it breathe for 10 minutes, part of the SO₂ evaporates.
• Vinos blancos y rosados: 100-150 ppm
Tip Chef at Home 360: Si eres sensible, elige vinos tintos secos, vinos orgánicos certificados o vinos etiquetados como "no sulfites added".
