Stuffed Fish Fillet


4 sole (flounder, red snapper, halibut) fillets
1 small onion, chopped
2 garlic cloves
½ red bell pepper, chopped
1 cup shrimps
1 cup bread crumbs
Splash of brandy
Salt and pepper to taste
Pecorino cheese
1 tbs paprika
1 cup crab meat (optional)
1 tbs butter
Melted butter
3 tbs minced green onions

Filling

In skillet with butter saute garlic, onions, bell peppers. Add salt, pepper and paprika. Cook for few minutes at medium heat. Add shrimps and crab meat. Cook until shrimps are red. Remove from heat then add the brandy. Return to heat (be careful with the flame). Let it cool. Place in a bowl and mix with the bread crumbs, cheese and green onions.

1. Preheat oven at 350° F (180° C/ 4 gas mark)

2. Place the fish fillets in a baking dish, season with salt and pepper. Spread the filling mixture over each fillet, and roll up. Place seam side down in baking dish. Sprinkle with paprika and melted butter. Bake for 15 to 20 minutes or until cooked through.
